San Diego Deli Expanding to Arizona

Get ready to feel your mouths watering, Phoenix residents, with the latest addition to AZ’s dining choices. Award-winning San Diego-based sandwich shop, Rubicon Deli, is opening its doors to an Arizona clientele.

The renowned restaurant will be opening two new locations in Arizona – one on Scottsdale Road and Acoma Drive in Scottsdale, and another on Central and Virginia avenues in Phoenix. At present, Rubicon has four locations in San Diego and Reno, NV. Their latest expansion will put them on the map in three states with a total of 6 locations.

The shop’s Scottsdale location is due to open at the end of this year, followed by the Phoenix location scheduled to open Spring of 2018. The locations both come with 10-year deals and an option to extend an additional 10 years. The stores will span 2,000 square feet, with the Scottsdale front opening in previously-occupied space and the Phoenix location being newly built.


Rubicon’s Chief Financial Officer, Marc Golan, says the Arizona additions will not be the last to the Grand Canyon state. “With an initial investment of more than $2 million in Arizona with our first two stores, we’re serious and excited about serving this market. We aim to open a total of 15 stores in Phoenix in the future,” Golan said.

Rubicon Deli is sure to be a unique addition to Arizona’s culinary scene. The store originally got it’s start in 1994, serving a Southern California client base and earning its stripes for its use of fresh ingredients and guarantee of delicious sandwiches.

The shop offers a wide menu of sandwiches, salads, sides and soups. Rubicon has plans to use local supplier Greco and Sons for their product needs in the new Arizona locations.

Along with yummy eats, Rubicon’s expansion brings several employment opportunities as well. Both locations will be hosting hiring fairs approximately six weeks prior to opening.
